I make egg muffins which are similar to frittata but more "portable".
Basically, beat up some eggs in a jug. Add veggies, ham, cheese, etc. Pour into muffin cases. Bake in the oven for 20 minutes.
You can eat them straight out of the oven, cold or reheat them for 30 seconds in a microwave over the next few days.
