It's my guess if you are using Lantus just once a day that you are injecting a fair amount of bolus Humalog to keep your bg levels ok. I had exactly the same problems as yourself but at the time I didn't know too much about using insulin to carb ratios. Because of hypos I started to test more frequently and also got hold of insulin pens that would deliver in 1/2 unit increments to see if I could fine tune my doses a bit better. I also changed from Humalog to Apidra and that helped.
Last year I changed to Levemir and injected that twice a day just to see if my control was better or the same. I felt that Levemir gave me better awareness so could be worth your while in asking your dsn to change you to that first before using animal insulin. If you inject your basal twice a day, you'll end up needing less bolus insulin so your hypo situation should improve. Also find out from your hospital about carb counting and using ratios for bolus insulin.
