I just use any slow cooker recipes, but don't add many root veg, no potatoes, or other high carb starches, and serve it out with only green veg or cauliflower. There are tons of free recipes online.
I tend to use my slow cooker to slow roast joints of meat so don’t follow recipes. Usually standard recipes can be easily adapted to low carb by just missing out or replacing items. Even easier with slow cooker recipes as they’re not dependent on you being very precise.
This book is a nice one and easy to us, a friend bought it for me a couple of years ago and I do use it now again for inspiration and when I’m in a rut
