Me again, wondering if anyone has any good recommendations for low carb bread? I used to use the Low Carb Food Company but they are no longer operating ( it seems) I tried the m and s bread which I'd called super bread. This didn't spike me after 2 hours..but it did at 3...
So wondering if anyone has any recommendations for Low Carb bread?

Not really. It goes up by 1.5 mmols at 2 hours but I don’t know how quickly it comes down as I haven’t tested beyond that. I also haven’t tested on its own as usual have butter, cold meat or cheese in a sandwich I think I might try BG 2 hours after eating just the breadDoes this spike you?

The low carb yeasted bread maker bread is just like a loaf from a good quality bakers' and I've made it many times. It has Oat Fibre in it (NOT Oat flour which is carby) and it has vital wheat gluten in it to give the dough a stretch and the finished loaf a bread like spongy texture. Vital wheat gluten has very few carbs. The finished bread has 2g carbs per slice, and is delicious. Highly recommended, and it doesn't spike my blood sugar at all.
Can easily be made without a bread maker, but needs to be carefully kneaded and risen prior to baking if not using a bread maker.
