Low Carb Breakfast

Hi @smc4761 there are a loads of low carb granola receipes out there

Also I think Aldi do one that was popular on the forum last year

Alison to be fair most of the Granolsas are not actually that bad for carbs, a typical serving is only 30g although I take slightly more. I am happy with the total carbs, its just it seems to give me a pretty bad spike, rising by about 4 /5 after 2hours before quickly dropping back

When you say "standing over a cooker", do you mean for ANY length of time? One of my main go-to breakfast is:
  1. Put frying pan on burner on medium high heat. I use a mineral steel pan which heats quickly.
  2. Crack 2-3 eggs into bowl and whip up with fork.
  3. Drop blob of butter into pan (it's usually nice a hot by now) and let bubbling stop
  4. Pour eggs into pan and stir around with spatula until just set and creamy. If your pan is nice and hot, this just takes a minute or so.
  5. Dump eggs onto plate, season lightly, and add more butter if desired.
  6. Eat.
Whole process takes about 2-3 minutes max....
