Low Carb Buffet Foods

Hi :)

I'm organising a buffet for a wake and would like some food there that I can eat, and my uncle is also T2. I low carb, and I think that my uncle follows the NHS's advice, as last time i saw him he was telling me that I can eat what I like, so long as i have it in moderation.

I've asked for chicken wings, cocktail sausages & cold meats, but is there anything else (easy finger food) I could ask for? I doubt that I'll want to eat vegetable sticks. I dont usually want to eat them normally lol. I'm ok preparing my meals but when it comes to buffet/finger food i'm a bit stumped. I witght ask for some wraps, cut up into slices as well as sandwiches as they will be filling and feel like you're eating a decent amount for the 'cost' of one wrap.

I can't take the mick either cost or preparation wise as the pub we're holding it in have said they will do the food for free.
 
Stuffed boiled eggs, pork scratchings, bowls of nuts, hummous and guacamole with - yeah veggie strips. Cheese, salads.

Thats what I thought, I cant be doing with salad after hanging about outside etc so I think i'll just stick with the kebab shop a few shops along. If i eat a shish as soon as i get there, hopefully i wont be tempted to nick things from the buffet :oops:

yeah, i could make them myself and take them with me (so i know its gonna be decent ham - i cant stomach ham with gristle in it). I suppose its gonna be packed lunch or chicken shish for me. Packed lunch will be better as i'll have things to eat throughout the day if needed, its gonna be a long day and i'll be there for the whole thing, we'll be last to leave as its our 'do'.
