Low Carb Cookies

Thanks to another poster here today that the Sprouts I had with dinner tonight that I read were 15gms of carbs per 100g were in fact only 3.3gms of carbs, so my little treat was fine. My carb intake today has been (by my not so perfect calculations (yet)) has only been 27g.

You're lucky you can stop at two-I find them very addictive and moreish. Also, as they are small and light I think "won't do any harm". Had 2 this morning and another 2 this afternoon :oops:

I get my almond flour (ground almonds) from Aldi. At 99p for 200g they are nearly half the price of other places.
I think they are also cheaper fro other nuts. I also grind almonds and other whole nuts as these give a different texture and/or flavour e.g. ground hazelnuts in meringue.

Of course other supermarkets are available!

Thanks carbdodger, that's great. (I also buy my chocolate in Aldis.)

I was pricing the ground almonds on the interent but didn't think Aldi's would sell it. It certainly is cheaper.

I have promised to take my cookies into work for overtime shift on Sunday-if they work out. :thumbup: A few of my colleagues are now low carbing because of the difference they have seen it make to me. I have printed out Viv's modified atkins post for them-just hope I'm not breaching any copyright laws :lol: (Thanks Viv.)
 
If you want really cheap ground almonds, coconut oil etc, then Asian supermarkets are excellent value. I've found one near me and I've got a huge shopping list of things to look for.

I made the cookies from OP today but not that keen on them-more spongy than biscuity.
I also made the choc chip cookies that Whitbyjet posted.
They are lovely and I will definitely make them again. They were more crunchy like a biscuit.
 
I am not that good at experimenting but let me know how you get on.

I did sprinkle some coconut into the mixture but I find them too dry. Although while cooking they seemed to be in a puddle of bubbly liquid!
 
We had a thread a while back about why can't producers make proper non-sugar biscuits. So here I am in Curaçao, quite primitive in parts, but I go in a supermarket and there are SHELVES full of no-sugar biscuits! Wafers, lemon almond shortbreads, chocolate cookies, oatmeal biscuits - I got some and they're GOOD. Back soon so will post some pics.

Marina - please make sure you dont go overboard with muffins/cookies, they are meant to be eaten as a snack only and only one or max two a day!!
Its important that you eat plenty of protein, vegetables and fat at each main meal, this will help you to keep full longer and reduce the need for snacking.

In the case of muffins, have one with a good dollop of cream and a few berries, far more filling and better than feasting on 3 muffins in one go. These are low carb, yes, but you still need to be careful not to overdo it, Viv is quite right, as usual.

Oh.....Oh...... I didn't realise that :oops: :problem:

I thought cos they were only 2g each I could eat alot more ( 5 of them = 1 choc digestive)
 
Oh deary me, hmmm thought the whole idea was to stop the craving for sweets and snacking, so the muffins and cookies would be an emergency stand by in case a craving sets in. The main focus would be on main meals??

I seriously think that if you eat plenty of protein, fat and vegetables for breakfast, lunch and dinner you could control the snacking and sweet tooth?
Also the muffins and cookies are so much richer than ordinary muffins and cookies, they are higher in fat = nuts/almonds, so they should be a whole lot more filling and satisfying than ordinary ones?
 
I hear what you are saying whitbyjet and I really do appreciate your advice.
However, it's not the satisfying or feeling hungry that's the problem. I think it's more to do with comfort eating or eating just for the sake of it- a bad day at work, an argument with teenage kids, stress with the ex. It's my way of treating myself/making me feel better. I know it makes me feel worse and does more harm than good and I am trying to convince myself of that. Thought the muffins would help in the meantime.

Anyway, after spending all that time making them, I wouldn't want them to go off.
 
Aw Marina, I am sorry to hear that, you have a lot of stress in your life, you probably suffer self confidence as well. Hmmm I wonder, have you ever considered going to Overeaters Anonymous? And also comfort yourself with treats that actually make you feel better, such as having your nails done, or going to a movie, buying a CD, a weekend trip away, a soothing bubblebath, and so forth, anything that would make you feel good instead of food which makes you more depressed and ultimately makes you feel a failure; though I hasten to add that you are most definitely NOT a failure, you are incredibly strong for coping with all the not so nice things that life is throwing at you, you are still trying your best to battle with it all where some of us might have given up long ago.
I dont want to sound patronising, I seriously mean it when I say that I admire you and know that you will win through in the end. Just finding out what works for you, thats the hassle, but you will find your way out, I am sure of it.

I've been baking the low carb cookies etc. Made Almond cookies which were surprisingly nice.

I'm not the diabetic in our house, that's MH, but we are both low-carbing and feel lots better. I know exactly where you're coming from with the comfort eating. The hardest part, I find, is at night when I'm tucked up in bed reading a good book. This has been 'my time' since my four were littlies and I'm well programmed to nibble chocolate and sweeties at this time. I also find between 3 and 4pm hard to resist snacks too. Luckily, I can usually sort myself out with fruit. I have made the most glorious fluffy, rich, chocolate mousse this week which had both MH and I smiling. And, hilariously, the kids telling each other not to touch the huge bowl of mousse as it's yucky diabetic stuff :lol: :wink: You'd think having a huge bowl would you make you pig out but you can't it's impossibly rich.

Have you thought of a hypnotist? A friend of mine used a hypnotist, who convinced her that she didn't need sweet stuff and it's really worked for her. I have no idea how much it costs but my friend isn't all that well off.

Hi Julia

I did give a hypnotist a fleeting thought before being diagnosed. Then I was diagnosed with diabetes and was so scared of complications that I drastically changed my diet and the weight started falling off (2 stones).But I have since lost the fear and have become complacent. I have not gained the weight but I haven't lost any more since Christmas.

Would love your recipe for the rich chocolate mousse :D
