Low Carb High blood sugars

So 3 years ago I was put on d Nav to monitor BGL & recalibrate insulin intake
My BGL was good but my weight shot up from 17/5 to 19/2 in 10 months
my insulin dosage was eventually 200 slow & 200 fast per day My BGL was 6.5
up to then no one had ever told me that insulin is a fat storing hormone
I decided to take control in July 2015
after watching Sarah Halberg on TEDx I decided to go low carb & stop insulin
in stages I have lost 5 stones
I now weigh 14/1
My issue now is that any amount of carb sends my BGL up
BUT it stays up
I have Libre Link
It tells me my average BGL is 20
What can I do to get my BGL down without resorting to insulin
This is what the hospital wants me to do but I am adverse to putting on weight again
I have heard a 5 day fast could reboot my pancreas to start producing insulin again

What sort of amount of carbs are we talking about? A lettuce leaf or a large bowl of porridge? Tell us what you eat on a typical day. Sometimes people are eating a lot more carbs than they realise.

on my best days my typical food is scrambled eggs & tomatoes, maybe bacon, soup, tea , coffee, dinner from the 8 week blood sugar diet book, some cheese, a couple of apples
on my worst days i slip in a binge of bread or biscuits, but theats once in a blue moon
its the constantly high blood sugarthat bothers me most
