Low Carb Ice Cream Recipe

As you love ice cream, @Grace04 , it would be worth it. My taste is usually savoury, so I bought one especially because of the itch. It's the sort you put the bowl in the freezer & I bought the smallest I could find, 1/2litre, the Lakeland Mini. It's simple, the bowl is small enough that I leave it in the freezer & it works fine. You could give your favourite a try, those mentioned above or anything that takes your fancy.
 
My absolute sweet-things archilles heel is ice cream. I love the stuff. I make pretty good substitutes (with mainly stevia sweetened products and other alternative sweeteners, natural colours and flavours) of my favourites. They are so good even people without diabetes like to eat it! (This is not true of most low-carb fare imho.)

I hate to say it, but the key was investing in an ice cream maker. Ice cream makers are mini churners and freezers, and make that lovely consistency, along with getting the creme anglaise just right, that makes ice cream the delight it is in texture.
It’s sounding more and more as though an ice cream maker is the way to go…….
