I haven't had a chance to make any yet, but I've got a recipe for low carb icecream that might be useful. It'd be great to hear if anyone's tried this and their thoughts on it:
Keto Ice-Cream
2 eggs, seperated.
60ml cream
sweetener to taste
2tsp vanilla extract
Whisk the egg whites until stiff. Use a big bowl Whisk the cream until thick Whisk the sweetener, yolks and vanilla together.
Dump the cream and the yellow mixture into the egg whites and fold in until it's yellow all over.
Divide into four containers and freeze.
You can also use a mixture of cocoa powder and expresso mixed to a smooth paste instead of the vanilla for chocolate ice-cream.
