Low Carb muffins

I got a cheapo muffin/cup cake maker the other day and I am delighted with the results. I've made a variety of low carb (almond flour / coconut flour) muffins in last few days using the following as a base recipe :-

150g almond flour
50 g coconut flour
2 eggs
2 tablespoons of butter
liquid sweetener (to taste)
1 teaspoon of baking powder.

And then either squeezed lemon , chocolate powder or rum extract.

This makes 7 cup cakes/muffins in my machine.

Absolutely delicious

They sound good I haven't got a muffin machine but imagine they will work in the oven ok so I will give them a try I will make them for my T2 husband he really used to love a muffin but not had any since T2
 
Enjoy, they are a real treat with minimal blood sugar impact.
 
What is the carb content of these ? and how many can you make ? ;)

Its around 14 g of carbs for the entire batch. In my machine it makes 7 so ~ 2 g of carbs each.
