Low carb on a low budget

Does your local store have a (sharp elbows ) reduced price section if so you could try to find out what time this is usually stocked up ,you can usually get cheap veg and sometimes meat and fish that has reached its sell by date but is perfectly good If you freeze or cook the same or next day

Sorry for your probs, hon. A few observations:

You don't need carbs. It's the only macro that isn't necessary. Protein and fats are.

You do need water so don't skimp. You live in the Netherlands so what comes out of the tap is fine, far as I know.

If you don't take care of your health, your plight won't get better. It will get worse and potentially much more expensive.

Have a look around. You have access to the internet so check what help is available in your area.
 
I appreciate the thoughtfulness in trying to help, but I also feel frustrated that my "I can't make this work" posts are being dismissed. I have no other resources. I'm stuck with the stores I have within walking/biking distance, and the fixed, inflexible budget I have - and that means my budget runs out after 3 days of eating low carb. I did the math with the best values I could find at my available stores, for which I rely solely on current sales to get any discount prices as they offer nothing else, and it's just not an option. I don't know what else to tell you. I'm a smart and resourceful person and I feel I exhausted all options.

@kittypoker: I cannot afford more than some tea bags and the occasional package of coffee, so water is what I drink on most days. Once a month I splurge on two cans of diet soda. I'm taking care of my health just fine, I wanted to try the low carb diet because I'm curious to see how well I do on it, but I'm really doing well on my insulin and moderate carb regime at the moment. Low carb is not for everyone for a multitude of reasons, and everyone's options should be individually assessed.

Bottom line for my case, for a final time: I'm grateful to all the suggestions, but within my available resources I cannot make this work. I wish I could because it all sounds really tasty and good for me, but it is what it is. I feel more knowledgeable and am making use of that info to the best of my abilities. I can't do more than that, so I consider this topic closed.
 
@DaftThoughts - you are doing your utmost with the resources you have and that's all anyone can do - I can't imagine what it must be like for you, I consider myself very very lucky, keep doing what you are doing using the knowledge you have gained as any change is an improvement. Stop stressing about it as that certainly isn't any good for your health.

If your numbers are within range on what you are doing then that's fine, you are right low carb isn't for everyone but being carb aware certainly is - please stick around and keep posting, there are always questions about coping on a budget and your experience in that could be a great support for someone - and of course we like to know how you are doing too and try to help more.
