I like the 1 minute flax bun recipe that mehhh2015 taught me. I slice it and make a sandwich with thinly sliced ham and provolone cheese, and 2 long, sliced kosher dill, "sandwich" pickles. Another favorite is a half avocado sliced with one or two strips of bacon. No need for mayonnaise because the flax and butter provide the fat. Sometimes, if I haven't already had a flax bun, I'll toast it and spread cream cheese on it. Yum! :)

1 Min Flax Bun Recipe...

I put 1 tablespoon butter in a small glass measuring cup.

I melt the butter in the microwave, typically 15 seconds then 10 more seconds to avoid splatter - (adjust for your microwave).

Add 1 egg, then 2 tablespoons milled flax seed - (1 tablespoon flax seed makes 2 tablespoons milled flax).

Then I add 1/4 teaspoon baking powder, and a pinch salt.

Stir thoroughly with a fork, pour into a microwave safe container. - (I use a round, 5 inch wide porcelain dish with 1 inch sides. Any shape will work).

Microwave on high for 1 1/2 minutes - (it's fun watching it poof!).

I remove it from the dish, then slice it in half. (Don't let the steam burn you. To slice, I put the "bun" top side down on a small plate and let the plate rim guide my long, serrated bread knife. If you can find a plate with the right depth, this is a safer way to slice it).

[Important: After eating one flax bun daily for a month - (I love them because they're so easy to make!) - I learned that milled flax is an "illegal" food on the Specific Carbohydrate Diet. http://www.breakingtheviciouscycle.info/legal/listing/F/ Those with Irritable Bowel Syndrome or any of the Inflammatory Bowel Diseases may not be able to tolerate milled flax. That said, flax oil is "legal" for us, and good for us too. :)]

1 tablespoon butter: 0 g carb - 11 g fat - 0 g protein - 100 calories
1 large egg: 0 g carb - 4 g fat - 6 g protein - 60 calories
2 tablespoons milled flax: 0.5 g carb (2.5 g carb - 2 g fiber) - 1.75 g fat - 1.5 g protein - 30 calories
1/4 teaspoon baking powder: 0 g carb - 0 g fat - 0 g protein - 0 calories
pinch of salt: 0 g carb - 0 g fat - 0 g protein - 0 calories

Total: 0.5 g carbs - 16.75 g fat - 7.5 g protein - 190 calories

1 Min Flax Bun - (see recipe above)...

5 ingredients: butter, egg, milled flaxseed (linseed), baking powder, salt

I store the flaxseed in the refrigerator then use a repurposed coffee grinder to grind the seed as needed.

And here's the flax bun out of the microwave, top side down. I use the rim of the plate to guide the knife as I slice it, but this plate was too deep resulting in one half to thin, the other too thick, on the day I took the picture, of course. Oh well...you get the idea. :)
