I'm getting really bored of eating / making soup / salad for my lunch every day. I need something that's quick to prepare and easy to eat at my desk, like a sandwich, but not a sandwich! I thought pizza may be a good idea as you can really vary the toppings. Does anyone have a low carb pizza base recipe that doesn't use a zillion expensive ingredients? Or know of a mix you can buy? I have seen a recipe on the internet which uses cauliflower, has anyone tried this?

I make pizza on a frying pan with the next mix:
2-3 tbsp soya flour
1 egg
1 pinch of salt
1/2 tsp baking powder
Heat the frying pan on medium heat, oil lightly and spread the mix on the pan. Cook for a minute or two and flip over. Top with what you like and pop under a preheated grill for a few minutes. I like serrano ham, green peppers and olives or ham and fresh herbs under a layer of cheese.
