Low Carb Rice replacement

I had been searching for a better replacement than the cauliflower for low carb rice or couscous to go with my vegetarian dinner of Ratatouille and fried halloumi cheese.

I tried the following tonight: small handful of pine nuts + a similar amount of sunflower seeds. I popped them into the food processor and blitzed them until they looked like breadcrumbs. Then I put them into an oiled saucepan on a lowish heat and stirred them round until they were starting to toast.

Quite a success. Slightly crunchy and it looked the part. However it doesn't absorb the juices quite the same as rice.

Has anyone else tried other replacement rice recipes apart from the cauliflower rice?
 
I use celariac regularly, for potato replacement, but not for rice, thanks bedshaped2000 I'll experiment with that too.
 
ive been going off celeriac a bit at the mo so ive been dusting it with paprika or chilli powder before roasting it. i find if its roasted its more palletable. somedays i just go for the roast potatoes making a 1mmol difference on my bgs :x
 
Sometimes I just have to go the low carb "pasta" alternative to rice. I have been doing zucchini (sliced with the grater briefly cooked in butter and garlic) or vegetable spaghetti squash or Konniyaku noodles (made from the starch of Yam Bean which is not the stachy yam we might expect from the title-- see also Jicama).
The real thing is that I have to get my head out of creating a dish that is "just like" the thing I used to eat/remember. Today I am eatijng away from Diabetes.
Stand up proud and eat where no one else has gone before! Try your variations and do not offer "Apologies" that it is a substitute for the "real thing". We, who have controlled our diabetes by diet are not going to kow tow to the cheap, "food is easy" and ready in 5 mins mentality.

Just a tip. A few days ago I made the most delicious Carrot Cake based on the Almond Meal Muffin mix. I just kept adding stuff. Grated Carrot, smashed pecans (could be walnuts) cinnamon, nutmeg, more oil. It is just about impossible to muck up this base recipe. If you really want to be showy you could microwave it and add a mascapone and lemon topping. Oh, sorry we were doing rice alternatives weren't we?

Thanks everyone for the excellent suggestions, I'll try them out. The strips of courgettes are a great past replacement but as I wanted something to go with ratatouille which already contains tons of courgettes I'll save them for another dish. I usually have them with a pasta sauce or instead of noodle with a vegetable stir fry, I love them fried too.

mm that carrot cake - more details please...

I often add paprika to cauliflower to spice it up a bit. We eat loads of low carb cauliflower cheese with melted Philadelphia and butter sauce. It is nice with mustard too.

Just posted the recipe for the Carrot Cake in the Food and Recipes thread. Now something that you have both set me thinking about.. Cauliflower Cheese as a replacement for my all time favourite - Cheese Macaroni. Can we do this? Yes, we can!

Of course you can - we have it every week as the low carb sauce is so easy - melt some phildelphia cheese with some butter and cream of creme fraiche. Stir into the cauliflower, pop some grated cheddar on top and brown under the grill. Easier than the white sauce I used to make with wholemeal flour. Oh an it is nice if you stir in some ready made mustard or some tabasco sauce.
 
I tried a new one last night. I shredded the caulifrower as usual and then nuked it for 5 minutes. I then stirred in a teaspoon of Schwartz Pilau rice flavouring. I put it back in the microwave for 1 minute. Voila! Pilau rice (sort of).

But what did it taste like - was it good, did you really enjoy it? Sounds nice, so I hope you did.

It tasted good. I want to experiment with this and try stir frying it in, perhaps, some coconut oil or making lemon rice etc.

Might experiement with this some time soon. Last time I tried cauliflower rice it was dreadful and tasteless, although I absolutely adore boiled cauliflower. Next time I may mix some in with normal rice and make a combo.

That's what it needs to take the blandness away!

Might also try adding fried onions and garlic to add flavour.
