Low Carb Saturday Night Pizza

When it's comes round to weekends, I always start thinking about all the lovely, but high carb treats I used to have on a Saturday night. I think the one I miss the most is pizza. My boyfriend, who's been really supportive and now follows a low carb diet himself, apart from cornflakes and white rice (which I've never been keen on anyway, so don't mind him eating them in front of me), said he couldn't stand it anymore an he really wants a pizza, but doesn't want to eat one in front of me as he knows this will be really hard for me to deal with.

So I've been having a look around and came across this recipe for pizza base using almond flour;

The conversions from the American cup measurements are 1cup = 110gs of almond flour and the same for the cheese.
She also has a recipe for deep pan if you prefer it a bit thicker. I've just given it a trial run and it worked really well, I couldn't tell the difference to be honest! And each base comes in at only 4g of carbs!

Can't wait to try this tonight with a nice mushroom topping and a glass of wine :D

Just thought this might be a useful recipe for anyone who's been missing pizza as much as I have :wink:

Give it a go if you like pizza, but are low carbing :D
 
Is almond flour the same as ground almonds? If not can I buy almond flour without going through the internet? I do not live in a multi-cultural area so have no access to specialist 'ethnic' shops.
 
You can make a GREAT pizza crust using, believe it or not, CHICKEN and mozarella chese.

Can't find the recipe right now (but I'm sure I've posted it here before!) but basically you stick some cooked chicken in a blender with some mozrella cheese, then press it into a baking tin, and cook for about 15 mins. take it out of the tin, bang it on a tray with some sauce + cheese + toppings in the oven for for 10mins and your done.

I have tried this. It was nice. You only need a 7" pizza and it fills you up nicely. Hold it's shape, and can be eaten with your hands.

If you're feeling brave, you can bend the edges over some cheese strips halfway through cooking to make a stuffed crust pizza.

You could always go for a Nigela Lawson Meatzza http://www.bbc.co.uk/food/recipes/meatzza_60080. Drop the breadcrumbs and oats and it is lovely and low in carb. :D

Thank you Patch. I am going to give this a try, as I cannot have wheat, am low carbing anyway, and also am allergic to all nuts.
 
Chick pea flour can a decent pizza base and full of fibre.
Tomatoes are a diabetics friend as potent in antioxidants-particularly the skin.
Mini-col do a cholesterol reducing cheese that tastes a bit like Lancashire, and top it with a few anchovies pre soaked in alittle milk to remove excess salt.
Top that with some leafy torn spinach leaves.
The Anchovy being a personal preference! :)
 
Hey guys! JUST registered but been using site for eons & through FB :) so hi!

I have PERFECT carb-FREE pizza! The BF was on restricted carb diet a few years ago & we fdiscovered an amazing pizza crust that tastes just as good, him being American was a must as he craved his pizza, espec the sauce!! I don't have link ATM as out & on phone, but basically a cup of cauliflower riced (blitzed in food processor), cup of Parmesan grated, add seasonings to aquired taste & mix, we smush it together (can dry out cauli in low oven BEFORE blitzing if too much moisture), pat out binded mix & place on one of those mesh baking trays (cooks evenly both sides & crisps a little), top with homemade sauce, add ANY meat & veg to your taste, top with cheese & brown... Mmmmm!! Its never failed us yet & has texture of doughy/bread! Sorry if its a bit sketchy, I'll hunt the PDF out, or you could just Google yourself, enjoy!! :)

It's 18 g Carbs for the base but I only had half so that's 9 g
This could be useful to anyone that wants to make a quick pizza

An alternative would be pizza toppings without the base.. just puta ll the toppings on a baking sheet and melt together in the oven.. or alternatively "fathead pizza"

I do this too it's really satisfying also half of a wholemeal pitta opened out can make a pizza :)
