Low Carb Slow Cooker Recipes

I was thinking of getting a slow cooker. I'm not at all good at cooking or thinking up recipes as they always turn out tasting foul. Before I was diagnosed I lived mainly off ready meals. Now I'm cooking proper meals but have a limited amount of things I know how to cook. I don't mind stocking up with herbs and spices as I already have loads and like adding spices to my food.

I do not like fish at all and I love spicy food.I'd love a recipe for a hot curry.

I can think of adding meat and herbs and spices to things but then how do you make it into a sauce you know like chicken stew or chilli. I just don't know how to do it. I think a slow cooker would be good for me because you just bung it all in and leave it do it's thing.

Has anybody got any low carb easy slow cooker recipes? I like to keep my calories quite low as well as I've got weight to lose.

Just stew the meat you have for a few hours on low in a stock cube then, to thicken the 'gravy/sauce mix some cornflower with a little water to make a paste and add to the meat. It won't be that bad on carbs, you only need about a tablespoon to over a pint of stock. (Don't add it all at once or it could be too thick) If it isn't thick enough then just add more of the cornflower mix. You may need to put slow cooker temp up to high so that it cooks out the cornflower . It is easy really.

Hi, I use my slow cooker a lot. I have recently bought a small one which I use for making my own pasta sauces. They are mainly tomato
based ones, you can use fresh cherry tomatoes or even a couple of cans of chopped toms and add onions, garlic, any herbs you wish,
a slosh of red wine goes in quite nicely too, then you could add chilli or mushrooms (chopped). Add any of your favourite veg. It works for me!

Similarly with meat based casseroles- chicken is lovely with leeks and mushrooms and a little cornflower thickening or the usual lean beef with celery
and may be a few carrots. Just a few ideas that I use.

Is there a lower carb alternative to cornflower? I would be happy using a teaspoon or so in a whole slow cooker load. Every time I use it however I do wonder if there is another lower carb way of thickening things. Is Xanthum Gum something worth trying (I may well have misspelled that)

You could always blend some of the veggies and add them to thicken the stew if you don't want to use cornflour or gravy. Alternatively, you could blend some beans and thicken that way ... I know they have carbs but they also have lots of fibre and are generally recommended for diabetics. Oh, I just saw you are very low carb so you would definitely not want the beans .. someone else might though :)

Congratz @Marieukxx the slow cooker is a wise choice, we just bought one for the first time. You are right, just cut everything up chunky and cook for up to 8 hours or more. We have started cooking extra (doubling up) it reheats OK.so we will only use it 2 days per week. and get 4 evening meals for 3 people.

Recipes - ours came with 2 recipes and one has potato so we just leave it out and add some pumpkin instead.
Thickening is not necessary they will cook with very little liquid and pumpkin breaks up and thickens it and so will cauliflower.

As for curries etc, you can buy packet mixes and soup mixes work fine too and experiment a bit with other stuff. Ginger and garlic and bay leaves are easy and curry can be tricky. We made some too hot but desiccated coconut took some heat out of it and so will microwaved grated cauliflower (it is a pretend rice) We put in bay leaves then took some out when it seemed a bit much.

The other thing you can do that makes it special is put in diet coke or diet orange and a few nuts.and even peanut butter

It is easy to wing it without recipes but find a recipe and drop out any carbs and replace them with other veg, and keep the water content down and thickening is not necessary. Thickening with corn flower will not add much carbs per serve. We like the extra pumpkin instead of thickening.

You can use red wine too you do not have to boil off the alcohol it does an infusion thing. Do not bother with browning meats, it makes no difference after 8 hours of slow cooking.

Special Hot Tip.
You can buy slow cookers that just use insulation to keep the cooking heat going for a few hours without power(check the internet for camp cooking and there is a been bag one made in South Africa they are on youtube too.)
So we put a small pillow on top and wrap it in a towel to keep the heat in and save power. CAUTION do not cover up the controls they might not like it.
