Low carb vegetarian recipes - what's your favourite?

Hi!
Been vegetarian for donkey's years, but only now diagnosed type 1, realise how hi carb we used to eat. Prefer not to eat too much eggs and cheese, so just wondering if anyone has favourite lower carb recipes to share?

Hello veggie for years , I am more of medium carb reduced carb , portion reduced , gosh how I hate these labels ...my label is type 2 :rolleyes:
I had forgotten this thread some great sweets ..must have ago ...I tend to stick with berries and yougurt ...with the odd cake or crumble ..so good to see the links agsin ...
I am not a great fan of eggs either ...some cheese yes ...my savoury meals have not really changed much ...

So just saying welcome ...hope you find something new ...I just google and adapt ...I love herbs and spices in my cooking ...
But those deserts well I must have ago ....kat
 
Mushroom Stroganoff (not sure about the spelling!)
Before deciding to be partially veggie (I'm still not 100% veggie), one of my favourite meals was Beef Stroganoff made with fillet steak and served with rice. So now I eat fewer carbs and very little meat. Therefore I have developed a new veggie version:

  • Sliced button mushrooms, as many as you think you and fellow diners will eat, quite a lot because they cook down.
  • Double cream, I don't measure it
  • Some vermouth or white wine, about a small wineglass-full
  • A small to medium-sized onion
  • Butter
  • Raw cauliflower
  • Salt and ground black pepper
  • Handful fresh parsley
  1. Gently fry the finely chopped onion in the butter until soft. Don't brown it.
  2. Process the raw cauliflower in a food mixer until it is 'riced'.
  3. Add the sliced mushrooms to the onion and fry gently for about 10 minutes.
  4. Set the cauliflower in a colander over a pan of boiling water and steam on a lowish heat for about 2-3 mins. Personally I prefer it undercooked.
  5. Add the wine or vermouth to the mushrooms/onion and cook gently for a minute.
  6. Remove from the heat, and cool for 10 seconds. Add double cream, salt and pepper to taste and lots of fresh chopped parsley.
  7. Divide the cauliflower onto heated serving plates as though it was rice, and top with the mushrooms.
