Low carb

Welcome minniemoo! Glad you found your way here.

What we're able to tolerate in carbs varies greatly. Root vegetables (carrots) and houmous (chickpea, a legume) aren't an option for me, but might be for you. Give it a try and test your blood glucose 1 hour, 2 hours, perhaps 3 hours after you eat to get an idea of how it affects you. Let us know what happens.

Sometimes, I'll add a small amount of a problem food to a meal because I want the nutrition or flavor. An examples would be black beans (taco salad) or onion, carrots, stewed tomatoes, kidney beans (4 of the 7 vegetables in my favorite soup; topping the soup with an ounce of parmesan and adding a 1 ounce side of nuts helps slow the glucose spike). :)

More and more, I like the concept of eating a combination of carbs, fat, and protein for all meals and snacks. Carrots with houmous would meet that criteria. And again, fat sometimes slows the glucose spike.
