I find that for me, on the whole, high GI foods are best avoided completely. Medium GI foods I can tolerate in small amounts especially if eaten with fats or cheese.
The unknown factor for me is the low GI foods - some of them I really react to. When I want to try a new (to me) low GI or medium GI food I usually test at 1 hr, 90 mins and 2 hrs. If, at 2 hrs, the trend is still upwards I carry on testing at 30 min intervals until the tide turns. If my BG spikes high or stays at a medium high level for an extended period then I either add it to the list of foods I won't eat again or experiment with eating it in combination with other very low GI foods, extra fat or extra protein.
