low/lower carb shortbread

I've got a real craving atm for shortbread, does anyone have any suggestions/recipes for a low/lower carb version? Thanks
 
Sorry, can't help. Interested if you do get a suggestion though as I used to love it.
 
They are basically butter, sugar and flour - you could use a traditional recipe and replace the sugar with an alternative sweetner such as xylitol. Or try to make it low carb by using a mix of various nut or seed flours.
 
It was suggestions for alternative flours and quantities I was after, I know different ones need different amounts of liquid, and unsure of which would give the best flavour
 
Ooooh I used to love shortbread too! Hopefully someone may have an alternative
 
I'm a keen baker and to be honest I don't think its possible to make a really nice low carb shortbread. You can try with almond flour but it wont be the same.
I have few recipes for some cookies on my blog but I have never succeeded with shortbread
 
I agree with the above , you would have to change it so much that it would no longer resemble anything like shortbread........shame but...
 
When I saw a reply from @ewelina on this thread, I immediately clicked on it, because not to put her on a pedestal, she seems to produce some **** fine recipes so if she had known a way, I would be trying it

Low Carb Shortbread Cookies

Ingredients
  • ½ cup butter, softened
  • 2 cups almond meal flour
  • ½ cup sweetener or half sugar half sweetener
  • ½ teaspoon vanilla extract
Instructions
  1. Preheat oven to 350. Spray baking sheet with nonstick cooking spray.
  2. In a medium mixing bowl, cream together butter, extract and sweetener.
  3. Add flour to mixture and continue to mix until dough forms.
  4. Roll dough out onto lightly floured (almond or coconut) surface until about ⅓ inch thick.
  5. Cut into rounds and place on prepared baking sheet.
  6. Bake for 10-12 minutes or until light golden brown. Allow to cool on pan for at least 5 minutes.
Notes
Serving size: 1 serving (Total recipe makes 20 servings)
Protein 2.45g, Fat 10.20g, Cals 105, Carbs 2.40g, Fiber 1.20g -- NET CARBS: 1.20g
 
I'm with you @CollieBoy, I was secretly hope @ewelina had found a way
I bought few new low carb flours so may try again I love shortbread. When I came to UK I hated the food here, but fell in love wiyh shortbread and earl grey tea straight away. I still have it from time to time as I can cover it with insulin. What if you had a couple and went for a fast walk? Would that help to prevent sugar spike?
 
My husband used to make Parmesan shortbread which was a huge hit at our Christmas Eve drop in parties.
