I have noticed that on some occasions, 2 hours Post-meal the reading is lower than Pre-meal
eg
Pre 6.9
Post 6.6 after eating 1 1/2 chicken breasts with all purpose seasoning, brocolli and approx 150g battered potato slices
Tonight
Pre 6.1
Post 5.9 after eating Thai yellow chicken curry with 75g (16.6 carbs) cooked brown rice and sugar snap peas
Why would this be?
I am limiting my carb intake (and feeling much better for it)
So far I have found that I can eat small amounts of potato (eg 2 tablespoons of potato salad doesn't spike me, or 100-150g of lightly battered potato slices) yet a bagel sends me through the roof
I will be trying Warburtons Seeded Batch for breakfast (11.6g carbs per slice) to see if that has an effect
Milk Roll was okay (2 slices at 8g per slice)
It seems that 20g carbs is a number that if I stay under I don't spike
Obviously lots more testing is required but the trend seems good, and hopefully I can enjoy the odd bit or rice/potato
Does anyone else just suffer from flour?
