Can people share ideas of things to take to work for lunch, that are easy to prepare? I have access to a microwave and fridge at work.
 
Hi, I have a waitrose near my work so at the beginning of the week I buy a couple of bags of salad, some prepared chicken, feta or mozzarella, sundried tomatoes in oil, pine nuts, sometimes avocado if there are good ones, and I then keep that little lot in the work fridge and make up a salad each day.
 
without endorsing a particular supper mkt, but Waitrose have some lowcarb ready meals that are very tasty, although a tad expensive that might offer you an idea for one lunch time.

I find that a factor - its too expensive .
Cheap and cheerful I like to do and use .

Use two in my home town that I frequently prefer.
Rustle up my own thing and take in a Tupperware box .
Ideal for on the go and can store in fridge at my parents home easily .
 
Every lunch I prepare for work is self contained - just a fridge, knife and plate/bowl required

Usually:
Mixed leaf salad or Little Gems
Lime zest baby beetroot
Avocado
Tomato
Cheese
Meat of any description - either hot from the local supermarket or cold (pre-cooked the night before) - such as kabanos, chicken, sausage, meatballs

I get loads of comments from colleagues who are envious of the salad
 
I usually have a salad of some variety with lots of different veg such as radishes, peppers, tomatoes, onion, cucumber, cheese & meat. My fav is a salad with cooked chicken, goats cheese & handful if walnuts..hhmmm Other days I have a bit of a cold plate thing going on. I pack a lunch box with a few slices of cheese, ham, tomato, boiled egg, slices of peppers, silver skin onions and a small dollop of coleslaw. Left overs from previous nights dinner are always good too
 
I usually take some home made veggie soup to heat in microwave. With that I have any of the following:

babybel cheese, hard boled egg, cherry tomatoes, flax crackers, tetrapack protein drink, nuts, veggie sticks, fruit, yogurt.

I make batches of mini crustless quiches in muffin tins using bacon, cream, cheese & mushrooms. I have a few hens so eggs are free :)

I find them very filling and I don't seem to get bored of them.

In the summer I take a salad in a tub. In the winter I make batches of soup at the weekend and portion it up to take to work. Today I'm having chicken and leek soup. Yum!
