Lunches?

Since starting my new diet I am struggling to find a lunch that fills me up - currently I tend to have a sandwich (lower carb bread) & salad - but I'm getting fed up with this - my eating struggle has always been with snacking & although I have gone for over a week with only one lapse I find I'm spending most of the afternoon hungry.

Does anyone have any cheap filling ideas?
 
I take soups and bake my own low carb cheesy bread sticks to go with that, keeps me full until evening, also have a look at the recipes below, they are all good for lunches or picnics, take a coleslaw or other salad with you. A yogurt and berries or custard pots for dessert, I am sure you wont be left hungry.

Best lunch for a diabetic - salad with vinegar and oil dressing. I like Greek salad with shrimp or chicken, it's filling and really lowers my blood sugar because of the vinegar. Research has shown eating a salad with vinegar and oil dressing like Balsamic, or any with vinegar, will lower glycemic loead of the whole meal by up to 33%. The Greek salad lowers my blood sugar around 100 points, about the same as a full dose/injection of Byetta. If your blood sugar gets high and you need to eat, try this!
