Lunchtime Snacks

I'm type 2 and I'm happy with my morning and evening eating control. But I find it harder to achieve a good balance for lunchtime. I don't want a full cooked meal. I prefer just a snack that doesn't need cooking or maybe just in the microwave.

I could use some suggestions on things to snack on at lunchtime that aren't going to spike my blood sugar.

Pre cooked eggs, chicken, cold meats, sausages
Cheese
Olive nuts

Rollups, use slice cheese and ham or cold meat slices. Can add rocket or coleslaw. Very filling
Fritatta or egg bites - like min oemelltes whatever flavourings you like. Cook ahead, last a few days I the fridge.

Greek yoghurt pre mixed with milled seeds and berries. Thickens nicely

A bit of salad (could be a prepared bag) and some decent coleslaw often sees me though the afternoon quite comfortably. If I'm really hungry then some cooked ham or chicken fills that gap.
