I was the same - pre-diagnosis we pretty much lived off potato/rice/bread/pasta and fruit.
For most of the time I have just dropped them entirely, and replaced them with (mainly) more green veg. Cabbage, spinach, kale, leeks, that sort of thing - all work, and you can add a bit of chili, cream or cheese for a change.
Swede is not too bad for carb content, and riced cauliflower goes OK with curries and chillis. There's various low-carb "breads" but they are much more expensive and it really isn't bread - but OK for some things - eg toasted with Marmite.
