Meals for work

Hi guys,

I am a vegetarian.
I was just wondering what you all took to work for your lunch and dinner? I'm aiming to get back to work this Monday, after having 5 weeks off post diagnosis, but I can only think of a few things to have.

1) Meat free items (eg Quorn chicken bites, Linda McCartney sausages) and salad/veg
2) Pasta bake and salad

I do have access to a fridge and microwave if needed. I will leave the house at 06:30 and not get home until 21:00, so need to take lunch and dinner annoyingly.

I am vegetarian, but most meaty meals can easily be adapted to be vegetarian.

Any ideas? Thank you,

Lizzie - Good luck with going back to work. I'm sure you'll be fine.

Are you on MDI or fixed doses? I only ask to understand if your choices need to be consistent (in terms of carb count), or if you are carb counting confidently. Also, do you prefer cold meals at work, or a cold lunch, but hot dinner, for example?

I'm not a veggie, so can't help you a great deal there, but may folks swear by a tapas sort of thing for lunch - chicken drumsticks, high meat chipolata sausages, olives, cheese, canned sardines, mini quiche. Obviously, many of those things are very unsuitable, but you get the drift?

There are a few "What have you eaten today?" threads - one low carb, another veggie and one general T2 (if I recall correctly). I bet you'd get some great ideas in there. @Avocado Sevenfold 's food is always good enough to tempt one to turn veggie, so she might be someone to look out for on the food threads.
 
@lizziewizzie I am not the best person to ask about work meals as I don't like eating at my work. I don't get peace plus there have been some questionable things kept in their food fridge (live fishing bait anyone? :***:) So I only eat food that is prepared at home.

If you have one of those wide necked food flasks, you can take anything really. Soups, casseroles, curries etc. Check out the veggie sub forum if you are looking for ideas.

Today I had a quick but tasty chopped up avocado and cherry tomatoes in a walnut oil and Dijon mustard vinaigrette. I also have a flask of soya decaf with a blob of coconut oil in it with me. Other lunches I like are almond flour muffins, Lidl roll sandwiches, chia seed pudding, crustless quiche, yogurt or quark with berries and nuts/seeds.
 
Hi Lizzie - I often make lunch when I'm making dinner. So I'll shove a plastic tub on the counter - and pop food in as I serve up the meal. Stuff like veggies with cheese sauce, quorn bolognaise over veggies (I'm not a veggie but we like veggie meals in our house!).
Makes life so much easier. Leave it to cool - stick it in fridge and lunch sorted for the next day.
If I haven't done that I usually just grab a pot of hummous and a carrot, or primula cheese spread (not sure if thats vegetarian but if not im sure some cream cheeses or spreads are) and some low carb crackers.
And I always have a pack of nuts with me to snack on if I need to.
