Is is always necessary to test before a meal I know pretty near what my BS levels are before meals it does not vary very much so what I really want to know is what they are two hours after a meal to see if something I have eaten has put my BG up more than usual

Testing for the sake of it is pointless. If you feel more comfortable testing 2hrs after then that's fine. Another option could be just to alternate your testing so you cover everything. The only flaw in your idea would be if 2hrs after you recorded a spike but didn't have a pre-meal reading, can you be sure how much the spike was ? If you are confident that your pre-meal reading vary little, no problem.

What would be considered a spike how high does BS have to be. I am only prediabetic and the highest BS reading I have ever had testing was 8.5 when I ate a bar of dark chocolate normally when I test before my levels are usually in the 5's and two hours after are in the 5's and low 6's so I suppose the 8.5 would have been a spike

I like to keep my post meal reading no more than 2mmol higher than pre-meal reading. Anything higher than that is not a disaster, it's a lesson. Either adjust food type or quantity.
