As a T2 now on insulin, I have to test before meals. Every so often, I'm in a rush, and I forget to test immediately before, but only after I've had a few bites.
Just how long does it take before anything you eat is reflected in your BS?

You should be safe for at least 10 minutes, probably 15. The rate of rise is affected by how fast the carbohydrate in your food is digested, so it depends on the glycemic index of what you eat. As a T1, when my blood sugar goes too low I take glucose, which is the fastest sugar to be absorbed. Even that takes 10 minutes to work, so I think any normal food eaten for breakfast will take longer...
 
Do you take mealtime insulin or long acting only? Or are you on a mixed insulin?
You say you have to test before meals but what do you do with the results?
