Methods of cooking

I use extra virgin olive oil for stir-fry cooking as it's extremely healthy but like other fats is high in calories, it's one of the good fats (monounsaturated) so enjoy! :)

Stir frys with the right ingredients are very good for us - loads of healthy veg and strips of chicken or prawns etc; with a fair scattering of chillis. I use olive oil quite a lot. No issues with blood sugar levels, don't know if it's otherwise healthy but don't care too much either! Only thing with olive oil, it doesn't get as hot as other oils before burning, so you don't get the sizzle the same. I sometimes use peanut oil instead as it gets much hotter. I'll probably be told that's bad as well, but I'm fanatical about BGs and don't care about other issues so much.

Try adding some garlic also to make it even healthier.

I love garlic ... that's for the help everyone I bought a stir fry in the supermarket and thought it might be my last but I'm glad I can still enjoy

If you buy the stirfry in the supermarket, watch any packets of sauces you get with it. Some of them have a fair bit of carbs, nearly all sugar.

You can fry in coconut oil as well. I use Fushi virgin organic coconut oil, and I buy it from Amazon. Works wonders on your hair and skin too. :D

Drat!! Beat me to it!! yes Coconut oil is very good too, especially if you are doing a Thai flavoured stir fry with lemon grass, ginger, fish sauce and some fresh lime juice and Chilli(to your own personal heat level :D ) You can even get Zero carb noodles that could compliment that but you'd need to get them off the internet as I haven't been able to buy them locally.

Ps Fresh tiger prawns are EXCELLENT in such stir frys!

I was scrolling too to see if anyone mentioned coconut oil, its very good for frying and you get a little taste of coconut too.

I think I would prefer to do without. As ordinary mayo is made with grain oil, and there doesn't seem to be an alternative, then I shall have to do without. I buy a lovely virgin olive oil from Sainsbury's infused with garlic, that makes a nice dressing.

+1 I believe Stephen tried to make mayonaise using olive oil but it was so strongly influenced by the taste of olives that it was inedible and ended up in the Bin! I'm trying to think of alternatives but I've drew a blank and use a little soured cream instead with chicken and salad

Sour cream, creme fraiche, Greek yogurt, they will all work. I will let Stephen experiment, and when/if he finds a no grain mayo then I'll make it

I make mine mayo with peanut oil or a light olive oil.

I just bought the big bag of frozen veggies ... I got the impression that the nice sauces with the smaller trays would be a problem

Only way of knowing is by testing afterwards, some do have a high sugar content so be warned! :)
