Hi again !!! ..getting organised now and got my monitor for blood sugars ..had a chicken sanwich @ 2pm .. by the time i got home due to snow 3 hours had passed but i was anxious/excited to see how to operate the monitor and also what the reading was .. it came up @ 6.5 .. .now tomorrow will start with fasting bm and continue pre and 2hrly post food ...

Great stuff.

Good idea is to keep a food diary including portion sizes and record your levels alongside. Then you can look back and learn. Patterns will emerge. All this will help you. Try to keep any rise under 2mmol/l, less if possible. Anything over that and you need to reduce the carbs in that meal. Remember to test the same meal a few times to get a proper picture. We all vary from meal to meal, even if its the same food.

If you want, you can record your levels and the food on here. We can chip in with comments, and it may help keep you motivated and give you chance to ask questions.

You can use butter and olive or rapeseed oils for cooking (and eating). Fats have no effect on blood sugar levels, and if you are cutting carbs right down you need to replace some of that lost energy (calories) or you may become tired and lethargic. Nothing nicer than mushrooms cooked in butter!

There is something nicer than mushrooms cooked in butter..... try frying an onion and garlic (both finely chopped), then fry the mushrooms (in butter) before adding a very generous helping of coconut cream. Let the liquid boil down a bit. Utterly delicious.... Best mushrooms I have ever tasted.
