If I have had cooked mushrooms for evening meal my blood glucose next morning (fasting) is slightly higher. Anyone else noticed this?

Well that's interesting and no I have not noticed it since I don't usually eat mushrooms for an evening meal. My question is, do you just have mushrooms or do you have something with them. I ask since they are low carb and maybe your body feels you have been fasting for longer than usual and so gives you a larger liver dump in the morning. I am guessing but would like to understand what is happening.

Is it just with mushrooms or do you notice it with other foods? They are low carb so you would have to be unlucky to be bothered by them. Are you sure it is not just the dawn phenomenon?

Again, what are you eating WITH the mushrooms or on top of the mushrooms?
