It looks really nice - well done for getting back on the wagon, it can be daunting - remember it's not a race and everyone tolerates different levels of carbs as @wiflib says rice isn't low carb but if you test and are happy with the numbers you get then you may be lucky in being able to eat it - I can manage a table spoon of basmati rice now and then.
But it's so much better than what you have been eating so well done on the cooking - remember test test test!
