Need recipe for spicy curry for leftovers?

Very new to healthy diabetic lifestyle and still trying to find my way through the maze ... can anyone help with a really nice sauce sauce recipe that tastes authentic, its very hard trying to cook a different way and at the moment i need as much help as i can get.

Try this. Chop one onion, finely and fry In olive oil in a wok(or pan) until glassy. Add one crushed clove of garlic, cook a little more ( not too much in case it burns) add Garam Masala plus a little ginger and some chilli( fresh or dried). I adore cardomoms, so i add some here. Fry everything gently. If it starts to burn, quench it with a little water. When the air is really scented, add a can of chopped tomatoes. you can now add some coconut milk, or cream, or yoghurt.
If you use this to heat your left overs in, be gentle with the heat, or it will "split" . A little cornflour dispersed in a little water, will help prevent splitting, but you may prefer not to use it for extremely low carb eating. I don't know quantities, because I just put ingredients in until it all looks and tastes right. It's often better after a day's standing in the fridge. to blend the flavours

As far as I know, curry & other spices are not a problem, but there are some provisos.

Our Indian friends at church use excessive amounts of salt;
Cut down on rice, naan bread etc; (no more than 30 g carb, so double that weight)

Our friends make the curry too hot, so we have to eat it with salad & yoghourt. It doesn't have an adverse effect on my BS. The latest was Saturday at a birthday celebration. The exotic creamy sugary birthday cake was a no-no for me.
