Hi Tansolo, you are actually doing all the right things at the moment. Before diagnosis, your blood sugars will have been fluctuating wildly. This has a temporary effect on your eyesight. Once your control settles down, your sight should return to normal after a few weeks. The condition you are worried about is called retinopathy. This will only usually occur after years with diabetes that is poorly controlled. I have had diabetes for 25 years, and only have the very earliest signs of retinopathy. This does not affect my sight, and with the very tight control I now exercise I don't expect it to progress further.
In my opinion, low carbohydrate diets could save the majority of us from developing complications of diabetes. The fact that you have decided to eat this way at such an early stage of your journey as a diabetic puts you in very good stead for the future.
