New diagnosis

Hi, I've just been diagnosed Type 2 I guess as so far no one has told me! I was told over the phone by doctor to start taking Metformin and go back in 3 months. I am really fed up as no other information given so stabbing around in the dark here, I already have Lupus and Fibromyalgia (10+ years) so this was just another blow. I have issues with certain foods due to, I think, medications have been given in the past for Lupus causing stomach problems so now take a PPI daily, nothing else. I seem to be ultra sensitive to chemicals so avoid medications unless essential. I am a vegetarian almost vegan, and due to gastritis in the past avoid dairy, use Almond milk and eat lacto free cheese. Have only just started eating eggs again due to what have read about diabetes but I would prefer not to. I've looked at this site for food ideas and have come up really negative, veggie recipes all seem to be curries or chillies and I dont eat highly spiced food due to digestion, also have mouth ulcers frequently. I rarely eat processed food, dont drink fizzy pop. I am feeling very very fed up and at a loss to what I am supposed to do. The Metformin makes me feel sick, and then I need to go to the loo. I would go back to doctor but have no confidence in him currently. Due to other health problems my energy levels are very low and cooking a meal takes a lot of effort, I dont want to spend all my precious energy cooking when I enjoy other things so much more..I'm not a foodie and see cooking as a chore. What the hell do I do now?
 
During the long hot summer my first meal of the day was often a salad - I had a bag of mixed salad, walnuts, beetroot, radish, cucumber, red or yellow sweet pepper, celery, a few peas, - anything in the fridge, with coleslaw and oil and vinegar dressing, a couple of hard boiled eggs and some cheese.
In the evenings I would have a stirfry with courgette, aubergine, mushrooms, green sweet peppers, the outer stems of celery, bean sprouts - anything I found in the fridge.
Although I am not vegetarian I do seem to eat a lot of vegetables.
Do be sure to have enough fat in your diet, for energy.
Now that it is colder I have cauliflower cheese quite often - it is simply almost cooked cauliflower, covered in cream cheese and then in a grated hard cheese - various herbs or spices can be added, but it is basically that, placed in a warm dish in a warm oven and left for the cheese to melt and a light golden top to develop.
Low carb cooking does tend to be very simple - I think it is simpler than 'normal' eating.
