Life with a new baby (my first) is chaotic and I have not been able to get on top of my meal prep etc. Any helpful hints, tips, suggestions (especially re quick meals and snacks) would be much appreciated while I try and get my bearings! TIA!
Hi @CJ1001 Congratulations on the baby (diabetes, not so much!). I am not sure what the 'advice' on eating nuts around babies is these day, but a couple of slices of low carb bread and peanut butter is a good low carb snack, and cheese is always good, a bag on mini BabyBels are useful to have in the fridge. All the sensible stuff is not 'comforting', although more salad is better in the summer.
A quick cheese and ham omelette , or boil a bunch of eggs to have as cold snacks too.
And to treat yourself, some Lindt 90% chocolate, or greek yogurt with a few blueberries, or mini sugar-free jelly pots.
Trying to think of things I like that are quick, easy and satisfying for you with other priorities and minimal time/energy; they work for me too, being worn out by teenagers and general laziness!

Hi congratulations on your baby. I have to make quick meals after shift work. My go to is air fried veg with feta. I dice aubergine large chunks, large slice a courgette, spray with avocado oil cook ten min shake then bung in whole mushroom, red onion cut in 4 not peeled outer part comes of easy when cooked, whole asparagus, whole baby tomatoes. Maybe some diced chorizo , serve thrown in a bowl with crumpled feta maybe over raw baby spinach . Can eat with bowl and fork easy to add other things to change it up . Eg olives or different cheese in the air fryer . Using a linner can cut down on washing up / lift the food out on the linners into bowl make light work of the washing up !
