If you have iplayer do watch "trust me I'm a doctor" series 6 episode 2. It was on Weds evening this week.

12 mins in, it talks about the levels of arsenic in rice... interesting...

If you liked rice, and believed it was healthy... I think its enough to make people think differently.

I know some vege eat eggs and some dont.. but there are other things things that can be substituted if any of the ingredients arent good for you..

Courgettes are yumm!!! So easy either spiralised or just scraped with a juluenne slicer and fried in butter...
I also add pesto, cream, cheese, oh and soft poached or boiled eggs on top... best snack out. Loads of variations can be done on this according to whether vegan/vege etc...or lactose intolerant etc etc

pepper 1/2'd roasted 1st. And then throw in pesto,sundried tomatoes and an eggand back in oven again to cook until egg starts to get suitable to taste buds.

all carbs will raise ones blood glucose when being diabetic... the best is to choose low carb diet style

maybe harder when being vegan, but nuts and avocado are fine choices... and there are vegans doing low carb high fat diets..

Hiya. @Avocado Sevenfold is an excellent resource for vegan meals.

I do think snacks are important! You might not want them once you add healthy fats to your diet and don't feel hungry but, psychologically, it's nice to have a go-to. I like a few walnut halves in full-fat Greek yogurt or a slice of ham wrapped around a cube of cheddar. Just a little slice of salami will satisfy that snacky urge.

My problem is not eating enough snacks. Hate to eat when I'm not hungry, but dr. said snacks are important. He was right as I go low before meals. I eat a LOT of nuts, baked green beans (the crispy kind with seasoning), and nut bars with chocolate (amazing low in carbs). I pretty much hate protein bars, but have them on hand anyway. Yeah, snacks are important.
 
This thread is in a T2 forum, so I'll ask @azure or any other mod to move it so you can get better advice.

You need different advice than a T2 thread can give. Do you carb count? Some T1's do very well with a low carb lifestyle, but it's a different disorder which needs different treatment. As I understand it, the right kind of snacks are great for a T1!

You've done the right thing by coming to this forum, hon. It's the best and you'll thrive.

 
Hi @coleyd I am a lower carb vegan and love it. You don't need to eat meat and dairy to control your diabetes, just remove the carb big hitters such as potatoes, rice, flour, tropical fruits and sugar. Test everything else. Tonight I will be having a Mexican feast and chocolate truffles for dinner. All lower carb and vegan. I will pop a photo up on the veggie forum later.

I think that our mood can be affected by running high numbers and moods can swing when our levels are rollercoastering. Being diagnosed also causes stress. Once you settle in to a way of eating that suits you, you will feel a lot more relaxed, I promise.

My tip for snacking is always carry a bag of nuts in your handbag. It means you never have to make a bad choice if you are out caught on the hop.
