No-cook Puddings, suitable for Christmas

Guys - I'm not a massive eater of puddings, but I think I would like to have a few more options, in addition to the ubiquitous berries and cream, for the holiday period. I know I'm going to do the Mary Berry Mouse Cake, without the cake base: http://www.bbc.co.uk/food/recipes/celebration_chocolate_26103

On that one, I'm going to use the bitter high percentage cocoa solids chocolate, and compensate by adding sweetener to the whipped cream, so hopefully it'll work.

I can cook, but Mr B is in charge of culinary matters in our household, and he'll be in gear over the holidays, so getting under his feet for more than a few minutes at a time would be at my own peril.

Great idea
Chocolate mousse is great. Just eggs and 80% choc and double cream. There is the recipe online as I remember it made 6 pots and kept in the fridge ok. They never last long

A good idea.

I only mentioned the berries and cream because ally mentioned her mum doesn't bake and, from reading ally's initial posts, she may be a newbie cook. I felt something quick and easy might help her overcome any sudden urges to dive into the wrong foods.

I'll be giving this thread a good read as I am looking for new alternatives myself ;-).

Fruit fools are always nice.. Stewed berries mixed with whipped cream and a bit of thick Greek yogurt to lighten it. And topped with grated dark chocolate. I also layer them separately in ramekins, top with a tsp brown sugar each and chill then pop under hot grill just before serving to caramelise. You could skip the sugar and top with some crunchy nuts lightly browned in butter.

I would appreciate any recipes for posh pud I can make in advance and freeze.

Individual portions best as I don't know how many people I will be catering for.

Or maybe I will just go and cadge dinner somewhere else.
