No fibre, high fat diet

Just been reading through various topics on forums and found this one - you have not posted after you saw the dietitian. How did you get on? When I saw the dietitian following my diagnosis 7 years ago I am afraid she was as much use as a chocolate teapot so I have been very much on my own. :(

Yep I have managed to see a dietitian, and actually have been really lucky in that she is really good and has been a huge help. We went through everything I could and could not eat and she has come up with a diet which, although pretty boring, seems to suit me fine. Her advice was that its good for my diabetes, that I stick to basically the same food during the day and a different main meal at tea time.
I have to make sure I eat carbs at each meal and have a snack between lunch and evening meal as well as something before bed. I also have to have a banana a day as its really the only fruit I can tolerate. The two veg I can have, apart from potato, are cauliflower and cucumber ( without skin) also a very little bit of broccoli occasionally.
So my daily diet is:-

Breakfast, Rice Krispies with banana or ready break or two slices toast
Lunch, Sandwich, with ham/ chicken/ beef spread
Snack, Muller light yoghurt toffee or vanilla
Dinner, Chicken wraps with cucumber / Thai green chicken with white rice / braised beef, cailiflower, new potatoes ( or chicken, gammon, mince )
Supper, Toast or teacake

I can't tolerate tomatoes so lasagne is out of the question, but I can have spaghetti and we have that with mince. My BG levels have dropped a lot and I am now trying to prevent hypos. I have gone as low as 2.3 but have not had any symptoms. The dietitian wants me to stay above 5 due to my epilepsy, as when I have a seizure my BG spikes then drops dramatically.
My dietitian says its possible to work with what I am able to tolerate and she did say that even though I need to eat carbs with every meal it is still possible to lose weight. I already have lost some weight, which is amazing as I am in a wheelchair and cannot walk.
