I have been low carbing for 5 weeks now and after some help from this forum, reading Dr. Bernstein and a low carb cook book I was on a roll.
My insulin demands dropped from 30-35 units per days down to 18-20 units. My sugar levels also improved massively. In the first 3 weeks I lost 5 pounds.
However....
About a week ago my bs levels started creeping back up and my weight loss stopped. I get into a horrible pattern of not upping my insulin doses for fear of putting on weight but despite this I have managed to put some of the weight back on. In fact all 5 pounds!And now I am taking more like 25 units per day
Plus my bs levels are still higher than they were at the start.
I cheated once after 2 weeks and had a few chocolate hobnobs and a piece of white bread (on a hang over) but after then I have been so strict.
To give you an idea of a typical day I eat:
Flax porridge for breakfast (eggs/bacon on weekends)
salad with meats/cheeses for lunch
meat/vegetables/creamy sauce or low carb shepherds pie/moussaka/casserole for dinner
I snack on nuts/cheese or cold meats once late afternoon.
I have also started eating a handful of strawberries now and again
The only possible explanation could be that I have had lots of social occassions of late and have drunk more than usual, but only red wine or gin and slims so again- I'm confused.
I also suspect a UTI which may explain the rise in BS levels so I am seeing the doctor on Thursday.
I feel so frustrated, I really thought my weight would have come down more by now and I don't understand why i have put 5 pounds back on. All the bread, pasta, rice, fruit and cereal I have sacrifced!!
