I think it is difficult to loose weight on a high carb diet if you have insulin resistance. By high carb I mean the government guidelines of 280g or higher. My experience with insulin resistance is I cannot loose weight unless my blood glucose is in good range 4-7 most of the time.It is possible to lose weight on a low or high carb diet.
I have a couple of pieces of toast now and again others cook breakfast.Carrots and onions in stews.Just gone into sweet potatoes as they were out of celeriac in store this week.Dont like pasta don't use rice.Just trying cauliflower puree as sub for potatoes.I am also checking my portion size again as well.You have mentioned potatoes but are you cutting down/out on all the other carbohydrates such as pasta, rice and breads or anything made with flour? It takes a while to get down to 20g of carbs per day. Most people start off higher (130g or below per day is considered low carb) and slowly reduce that figure to a number they feel comfortable with and which keeps blood glucose to a better level.
There are a lot of hidden carbs that we can sometimes come a cropper on such as those in pasta sauces or preprepared foods.

I did get a low carb gravy granules but can't stand them, so I use Quick from works not sure how I would get onion flavor without onions.To add to what @Guzzler said, I would say that carrots and onions can also be carby so care needs to be taken - and what do you use to thicken your stews and for the gravy?

Sorry predictive text it's supposed to be Quixo. It has1.5 carbs and 0.5 sugars per 50 ml.I'm not sure what Quick is?
Thank you no apology necessary Guzzler.I have to apologise @Motherhen2014 I should have reread your OP today, I misremembered and thought you said you were on 20g carbs per day. Sorry about that but I will say again that under 130g carbs per day is considered low carb and it is imo a good place to start. You can then lower that number until you reach a point that you are comfortable with and that shows better bg levels. Good luck.
