I have been missing my lasagne, so, I can use aubergine for pasta, but I like to follow a medium 'healthy' fat diet hence I'm a bit wary of using cream and cheese for my white sauce.
So I found a recipe for cauliflower white sauce, and oh my gosh it is amazing, it a makes lush lasagne.
So you simmer a cauliflower in two small cups of water till fork soft, then add 2 tablespoons olive oil, 2 ozs strong grated Cheddar, and 1 cup of unsweetened soya milk, season with salt and pepper, then blitz with a blender till smooth. You can add more liquid if necessary.
Honestly it is so delicious, even my husband who dislikes cauliflower loves it.
