Oopsie bread bacon sandwich

My 1st bacon sandwich for over 6 months.

Scandinavian Oopsie bread. Just eggs and cream cheese (plus a little salt and backing powder). Delicious.

Less than 1g carb per slice.

If you haven't tried it, I recommend you do.
 
i have done the oppsie bread to and was nice altho mine went a bit bonkers in the oven but enjoyed them to x
 
Oopsie bread (6 slices)

3 eggs
100 grams (3.5 ounces) of cream / soft cheese (Philadelphia etc)
a good pinch of salt
½ teaspoon baking powder

Separate the eggs, with the egg whites and yolks in separate bowls.

Whip the egg whites together with the salt until very stiff. You need a good whisker for this. It is very important that the mix is stiff and will not run.

Mix the egg yolks baking powder and the cream cheese well.

Gently fold the egg whites into the egg yolk mix – try to keep the air in the egg whites.
Spoon 6 oopsies on a buttered baking tray or grease proof paper.

Bake in the middle of the oven at 150° C (300° F) for about 25 minutes – until they turn golden.

You can also put different kinds of seeds on them before baking... poppy, sesame or sunflower seeds etc.
