Type 2 Out for ideas, please

I'm going to start logging what I eat so I can really see clearly if there's any pattern but I seem to be getting higher spikes randomly or not dropping after food. I am so tired most of the time.
Any advice?
 
You will have a lot more energy and reduced blood sugar if you have a low carb diet. See https://www.dietdoctor.com/low-carb for some ideas of what to eat. You need to cut out bread, rice, potatoes, pasta and breakfast cereals along with fruit high in sugar such as bananas and grapes. Fruit juice should also be avoided.

Yes, keeping a food diary including portion sizes and recording your before and after levels alongside is the way to go. The higher spikes and not dropping will be the carbs. The tiredness could well be high blood sugars although there are other reasons for it. (Thyroid issues and vitamin deficiency also cause it)
