over whelmed with diabetes what to eat and my sugar going high

I generally eat what I want. I have a very sweet tooth and my sugar levels are all over the place. I am interested in a low carb diet but I don't know where to begin .
 
I was diagnosed type 2 back in January, and as I was a bit overweight (14 stone plus) a diet was recommended. I'd been on the Michael Moseley 5:2 diet until Covid and always found it quite easy. With the new diagnosis I reckoned it was worth looking at his 800 calorie diet. I lost two stone in two months, and since then I've maintained a low carb intake (to the dismay of my GP surgery who say they "don't recommend a low carb diet". All the evidence and research I've seen says it's a good idea. I'm down to about 12 stone permanently now, and in terms of sweet things I allow myself chocolate from dark chocolate, no sugar (sweeteners yes, sugar no), I have occasional slices of cake, but mostly I have migrated to lots of nuts and fruit. I'm afraid if you want low carb you have to kick the sugar habit!

It would help a lot if you filled out your profile to add that your a T1 on insulin.
I know you posted in the T1 sub forum, but it's easy to overlook this.

How are you adjusting your insulin doses?

If you carb count and base your doses on the amount of carbs you eat, you can eat less carbs and adjust your dose accordingly.
If you're on fixed doses for your meals, you cannot cut the carbs without going low.
