Overwhelmed....can't think...husband now diabetic

You could also try spinach pasta, it's not bad!

But I think I'm getting the hang of it by reading what you are all saying. Just do the same as usual but keep his plate clear of the carbs, therefore recipes with them in, remove it or substitute...

I've got some sweetener rather than sugar so I'll have to have a play around and see what I can make.
Just for the record I have already made aubergine lasagna, which is nice (not the same by any means) but very nice.

I did smile when I read your post, as all you were saying was exactly what I said at diagnosis. Now, it's all so easy because I know what I'm doing. :lol: Your hubby will be fine, he seems to be in very capable and caring hands.
 
I sympathize ,I am in a similar situation, My husband has type 2 and after a few years and health problems he is coming around to dieting. I am finding it hard to keep him to approx 90 carbs a day , and I was running out of idears till after some working out , I discovered that the menu`s for red days in an old slimming word magazine were low carb so I go there for menu idea's.
Reducing his porridge or musli to 30grms in the morning has made a difference to his am blood sugar`s. A good meal is a stir fry in a non stick wok using just veg ,lean chicken or salmon plus some soya or fish sauce..
Stick with it.
 
I just wanted to say thanks to everyone for your help. I'm plodding along getting the knack of some things and even made my own recipe for him for Tiramisu..... he's posted it somewhere.

I used sugar free biscuits, mascarpone, eggs, sweetener and sugar free chocolate powder.
I actually liked it too.
The biscuits aren't terribly low in carbs as each one comes up around 3-4 g and I used quite a few (21) in the Tiramisu dish - however it serves between 4-6 depending if you can get the dish off them (namely my husband) The best thing is his sugar levels did NOT go up after 2 hours of eating it, so FANTASTIC from him.

If anyone can't find the recipe I'll be glad to give it.

I also stole a recipe from HAIRY BIKERS - they are currently trying to diet and they made a lovely low calorie and NO carb lasagna. I usually make mine with aubergines but basically it becomes a moussaka so I tried theirs....
The secret ingredient instead of pasta - LEEKS. It didn't taste of leeks and actually was really nice. I used cornflour to thicken my white sauce and reduce the amount of cheese so it wasn't laden with 100's of calories so that I could eat it freely too.

Just finished a 10.87 km bike ride with hubby who's trying to lose weight, our longest yet - not bad after starting a month ago at 3km and thinking that was fantastic.

Here's the post for my a yummy Tiramisu....

yes it has a lot of biscuits - it's because they are like small skinny rich tea biscuits so I did 3 layers. You could get away with 2 layers but remember YOU ARE NOT MEANT TO EAT ALL THE TIRAMISU - its for 4-6 people!!!!! GREEDY BUGGERS lol

Pop it in the fridge for at least a morning and it will be lovely by tea time as a smashing treat... it might be safer to SERVE it then the diabetic member won't get to eat it all. Or another idea, make smaller ones.

mmm now you know who my husband is....

Just wondering - is there any chance you could encourage your husband to get into the kitchen and reduce the burden on you of working out what he has to eat?

My husband and I share the cooking - I wouldn't dream of expecting him to work out all our meals for the week, especially as my diabetes coupled with being veggie make things so complicated!
 
Yes I did try that approach, but then it was 2 meals trying to be made at once which didn't work! He does make himself and omelette at lunch times which takes the pressure off me then so I make myself something different as I don't like them.
