Just noticed that it is Shrove tuesday next week.
Has anybody made pancakes with Soya flour or coconut flour?
Or have any recipes for low carb pancakes?
 
I've perfected pancakes using almond flour and almond milk.

100 g Almond flour
2 eggs
a touch of olive oil
Add Almond milk for desired thickness.
sweetener , cinnamon and lemon to taste.

Almost like the real thing :-)

What on earth are psyllium husks?
Revolting gloop!

But see here for a more rational answer - you can use them on low carb diets if you are a bit bunged up (aka constipated), which is how I became acquainted with them.

the come from the psyllium elephant, many elephants must die to produce an ounce of husk :(



not really, you can buy it in some health shops (not holland and barret) or online, its in loads of recipes

The little you use in most recipes wont affect your bowel movements, no need to worry. Psyllium husks are quite good to bind stuff together, like the eggs in the pancake recipe.
For constipation I would recommend to use whole psyllium seeds in water.

Thanks to the comments on this page, I used baking powder and unsweetened vanilla extract, and it was pure win. I have made a couple of batches now (I use a teaspoon of Stevia as the sweetener), and they are pure win. However, my wife loved one batch, and did not enjoy the second batch quite as much. Therefore, I am going to try these tomorrow morning. http://www.ibreatheimhungry.com/2012/01/cream-cheese-pancakes.html I will post when I know how they taste!
 
The cream cheese pancakes turned out great! I love both recipes, but my wife prefers the cream cheese. She is not a massive fan of cinnamon, so I switched it for unsweetened vanilla extract.
