I love pancakes.

Before I was diagnosed, I wouild make panckaes bout 2-3 times a month for me and my son. With the usual sauces - lemon & Suger, Tates Golden syrup, occaisionally Jam, sometimes even Nutella.

Pancake day is approaching so I am after any Low carb recipes (if they exist) for the pancake batter and any suggestions for toppings. Sweet ones to replace sugar and lemon etc.

There are actually many, many low carb pancake recipes out there online.
The problem is that most of them are very disappointing.

I have tried several, from one that was thin and crepe-like that tasted of egg and coconut, to thick American-style ones made of tinned pumpkin. Those were much nicer, but very fragile. There is one just made of banana and cream cheese - which I didn't think fit the 'low carb' description very well.

If I were you, I would have a google for 'low carb pancake recipe' and just follow your nose until you see something that appeals.

As for toppings, the last time I made pancakes (for Mr B) the topping was blueberries and cream. And I remember thinking that I would have preferred raspberries, because the blueberries were too bland and sweet. lol.

There are a number of different sugar free syrups out there. People who like them think they are fab, but I tend to find they have a chemical aftertaste, so don't bother any more. I think one of the brand names is DaVinci.
 
I regularly buy pancake mix and sugar free maple syrup from Skinny Café an on line store. It’s aimed at the weight loss market but those two products also happen to be low carb. May not be quite time to have them delivered by pancake day though. They have a chat facility so you could ask. My Saturday low carb lunch is Skinny Café pancake with bacon and SF maple syrup.

Same here. I love them and could eat them all day lol. Probably the only time I like being T1D. I will be using a fair bit of insulin on Shrove Tuesday. Note....I do tend to use fruit and not sugar etc on them :D
 
I am tempted to repeat my Weetabix test of last weekekend - make one eat it and see what happens. That said I ate two weetabix and my BG jumped by 1.7 with the weetabix so it will probably go higher with the pancakes.
 
Just an update, I ordered pancakes and syrup from Skinny Café yesterday and they’ve just arrived, in plenty of time for pancake day! :hungry:
 
Last time we ate pancakes, instead of eating 4 I ate only half a pancake, with all the bad things on top, and a big nice salad with lots of yummy things. When eating with friends I (usually) take the same approach with deserts. I just have two bites to enjoy the taste and then have coffee or cheese or such.

I was looking for a "raspberry" icon so I could blow it - as you are just showing off now.
 
I make pancakes with almond flour or coconut flour and eat it with yogurt and sugar free maple or vanila syrup, i love it. almond flour is super filling. I have a huge portion and it is only 12g carbs
 
I make them for the family each shrove Tuesday and have one myself. I have it after my meal which I make fat heavy (crustless quiche or similar) and it has very little effect on bg :hungry:
