In praise of the humble bamboo shoot.
I get through a fair bit of green veg. from day to day. Unfortunately, since the pace of flora evolution is painfully slow, there won't be any new 'product lines' coming along anytime soon.
Celery is a favourite, and at 0.9g carbs per 100g, I thought I wouldn't ever find anything lower.
Then I had a look at the nutritional info on the side of a tin of bamboo shoots and guess what - 0.7g per 100g!
What's more, they are lovely, have a really nice texture a bit like an al dente pasta. Fling them into a Thai curry and you're in business.
I can see why the pandas enjoy them so much, although given their figures I reckon they're a bit partial to the occasional king size Mars bar as well.

All the best,

fergus

Send me that panda! The bamboo at the entrance to my car port is now about 5 m high and drips on me when i go to get my car. I use the bus as often as I can.

I'm not giving my bamboo away to anyone who is not a panda. I'm keeping it for bean poles next year. his year's crop is pretty much finished. I grow beans in pots and need about 6 poles per pot..

Just wondering - do you dream carbs? :)

Useful info though - I haven't switched to serious low carbing yet - I am sure I will in time. (Mind you going by the previous discussion re Diabetes UK advise I am a low carber!)

I haven't given the carb values of veg much thought yet (was told not to bother counting it) but will bear this in mind - I love bamboo. How much for beansprouts?

Hi Louise,

Just wondering - do you dream carbs?

No, but I do have a recurrent nightmare of being chased by a dietician dressed as Bertie Bassett crying 'Eat me, eat me, you know you want it!'

Don't know about beansprouts, but they're probably very low in carbs too. Panda's are zero carb, but an aquired taste, I'm told.

All the best,

T1 husband with 2 Charcot feet, tripped over a pavement in Spain in June and banged his head. ( on the ground) Diagnosis by Spanish doctor was "Ochos Panda" if that's the correct spelling.
Beansprouts (mung raw) 4.0 carbs per 100g
Bamboo shoots, canned 0.7carbs per 100g.
No wonder those pandas eat so many!

Fergus, and anybody else who loves Asian food, especially bamboo shoots, have a look at the Recipes thread. I've just added a recipe for Sarawak Laksa. Hope you enjoy it.

Fergus,

You beat me to it!! I too have discovered how low carb bamboo shoots are. Bean sprouts are low too, although not as low as bamboo shoots. Bean sprouts are 2.5 g per 100g and they are fab. You can buy both in in tins in water as fresh don't last very long. I get mine in Asda. Both are great for "padding out" in stir fries etc.

Fab. Tonight will be a red curry night methinks. Prawns, mussels, squid, red thai paste, coconut milk, onion, garlic, courgette and our new friend, the bamboo shoot. Oh, and stir fried grated cauliflower instead of rice of course.
Bon appetite!

All the best,

fergus

Bean sprouts also do well as a spaghetti substitute (though you may have to tinker with the herbs and spices in the sauce) we get them in a bag on the salad counter

Thanks for the reminder, I had some bamboo shoots and water chestnuts (tinned) in the back of the cupboard which I'd forgotten I bought.

what do bamboo shoots taste like then?

Is this the sort of bamboo that grows in the back garden? my sister's new house as bamboo in the back garden... maybe it would have a use? lol
